Coffee Chocolate Chip Cookies

On a lark, I decided to make some cookies with some more adult flavors. I decided I wanted something with coffee and some spice. Normally I would just go google for a recipe, but this time I instead tried ChatGPT. To me surprise, it gave me a surprisingly good recipe. I’ve tweaked it a little, to reduce the sugar and to add cayenne powder and walnuts, but the bones of this were done with AI.

Ingredients

  • 1 ⅛ cups (140 g) all-purpose flour
  • ½ tsp baking soda
  • A generous amount of salt (½ – 1 tsp)
  • ½ cup (113 g) unsalted butter, softened
  • 60 g brown sugar
  • 40 g granulated sugar
  • Ground coffee from 1 K-cup (roughly 10 g)
  • 2 tbsp cocoa powder (roughly 15 g)
  • 1 tsp vanilla extract
  • 1 large egg
  • 1 cup (170g) dark chocolate chips
  • ¼ to ½ tsp cayenne powder (adjust to taste)
  • ½ cup chopped walnuts (roughly 50 g)

Directions

  • Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • Mix dry ingredients: In a bowl, whisk together flour, baking soda, salt, cocoa powder, and cayenne.
  • Cream butter and sugars: In a large bowl, beat butter with brown sugar and granulated sugar until light and fluffy.
  • Add coffee and flavorings: Mix in the coffee from 1 K-cup, vanilla, and egg until well combined.
  • Combine wet and dry: Gradually add dry ingredients to the wet mixture, mixing until just combined.
  • Stir in chocolate chips and walnuts.
  • Scoop dough into balls (about 1.5 tbsp each) onto the baking sheet, spacing about 2 inches apart.
  • Bake for 9–11 minutes, until edges are lightly golden but centers stay soft. Note: I find this is highly variable based on the oven. I usually will bake for closer to 15 minutes.
  • Cool for 5 minutes on the tray, then move to a wire rack.
